actually not new to me. I have made this recipe several times.
ok new recipe here. Lime grilled chicken breast, 4 - 4 oz boneless skinless chicken breast. 1/4 cup fresh lime juice, 2 tablespoons extra virgin olive oil, 1 garlic clove chopped, 1/4 tsp dry thyme, 1/4 tsp dried rosemary chopped.
Mix lime juice, oil, garlic and herbs, set aside.
Pound chicken breast with a mallet between two pieces of plastic wrap to even them out until they are about 3/4" thick. Sprinkle breast with salt and pepper if desired. Place on a lightly oiled grill over medium heat. Brush with lime juice mixture. Cook for about 6 - 8 minutes turning every so often and brushing with lime juice mixture each time you turn them. Cook until they reach an internal temperature of 160 degrees remove from grill and cover with foil. Make a tomato salsa by chopping 2 Roma tomatoes, 2 to 3 leaves fresh basil chopped, 1/2 tsp. fresh thyme, 1 clove garlic chopped finely, 1 tbsp. lime juice and 1 tbsp. olive oil. Slice chicken and serve over fresh greens top with 1 to 2 tbsp. tomato salsa. Or serve with quinoa noodles.
Congratulations Suzann, my hubby and I are trying to lose weight also. I am down 30 lbs. I have 45 to go.
2 eggs, 1 cup sour cream, 1 cup stevia or truvia, 2 tablespoons flour, 1 tsp vanilla extract, 1/4 tsp salt, 1/2 tsp cinnamon, 1/4 tsp nutmeg. Mix all of these ingredients add 3 cups peeled, cored and chopped apples of your choice. Pour into a pie shell. I put a lattice crust on top. The recipe called for a brown sugar, flour and butter crumb topping but since I substituted stevia for the sugar I did not want to put sugar on top. Bake at 375 degrees for 35 to 40 minutes or until set. Enjoy. I try to do sugar free recipes the best I can for my hubby because he is diabetic.
